more grilled vegetables (shocking, I know)

Lately, I have bene elevating these vegetables with this simples--and adaptable--dressing:

Grilled Vegetable Dressing

Ingredients

• 2-3 Springs of fresh Leafy Summer Herbs (ex: basil, oregano, mint, thyme, etc.)
  
  
• Olive Oil
  
  
• Orange or Lemon Juice
  
  
• Orange or Lemon Zest
  ​
• Salt

Equipment

• Immersion Blender with blending cup

Process

1. Place 2-3 sprigs of selected herbs in an immersion blender cub. Add oil and orange/lemon juice (at a 3:1 ratio), and salt.
   
   
2. Blend until a smooth & creamy consistency is reached and no solid pieces of the herb leaves remain. Mix in the zest to finish.
   
   
3. Drizzle onto vegetables when ready (stir immediately beforehand if resting prior to serving)
