the perfect bouquet of pasta

the recipe follows the basic fresh pasta recipe but with the addition of 1 boiled & pureed beetroot and the subtraction of some flour.

Dry Ingredients

Spaghetti

Ingredients for the Sauce

olive oil
garlic (chopped)
cherry tomatoes (cut in halves)
8 oz. tomato sauce (canned or fresh)
fresh thyme
s/p

Instructions

Heat pan on medium heat and add olive oil. Once heated, simmer chopped garlic until just starting to brown
Add cherry tomatoes and cook down until slightly softened. Season with salt and pepper.
Meanwhile, bring water to a boil in a medium sauce pot. Once boiling, add a generous amount of salt to the water and add the spaghetti. Cook the pasta according to the packaging instructions.
Stir in tomato sauce and throw in 2-3 sprigs of fresh thyme. lower heat and allow to simmer. Continue to season with salt and pepper, to taste, if needed.
When pasta is approaching finishing, reserve 1 cup of pasta water. Remove the sprigs of thyme from the sauce, drain pasta, and mix in with the sauce. Gradually stir in as much reserved pasta water that is needed until sauce is smooth and velvety. Garnish with fresh thyme and serve.
